Flatware is most commonly made from 18/10, 18/8, or 18/0 stainless steel. The first number refers to chromium (for rust resistance); the second, to nickel (for shine and durability).

18/10 offers the best balance for hotels and restaurants—strong, long-lasting, and bright.

Forged flatware is made from a solid piece of heated steel, shaped for a heavier feel and refined weight—preferred in premium dining settings.

Stamped flatware is pressed from steel sheets and offers practical durability for high-volume service. Many venues pair forged pieces from Casa Bugatti or Degrenne with stamped essentials from Folio by Steelite.
